Production Details Dom Pérignon 2006 vintage produced from 17 Grands Crus in Champagne and Premier Cru of Hautvillers, 100% Grand & Premier Cru vineyards. Blend of 60% Chardonnay and 40% Pinot Noir. Fermented using reductive winemaking process to minimize oxygen exposure. Aged on lees for 8 years before first release (Plénitude 1). Challenging vintage with very hot and dry conditions overall. July experienced extreme heatwave, followed by cool and humid August. Favorable September weather helped grapes develop maturity. Harvest began September 11 and lasted four weeks, marking the longest harvest on record for Dom Pérignon. Cellar-based ripening was very slow; wine was dominated by fruit ripeness until 2015 when the comprehensiveness and harmony of first plénitude was revealed. Described as riper and more voluptuous vintage with phenolic intensity. Features signature smoky character from reductive winemaking. Thick layer of limestone and chalk soil allows vines to access necessary nutrients. P2 version disgorged September 2021 after 14 years lees aging.
