Production Details Plénitude 3 (P3) is the third and most mature release of Dom Pérignon, aged for over 25 years on lees before late disgorgement. P3 represents maximum complexity and concentration, with all components fully integrated. This is the most accomplished form of Dom Pérignon, produced in very limited quantities. Fermented in stainless steel tanks using cultured house yeast strains. Full malolactic fermentation completed. The 1993 vintage was marked by early budding and a warm, stormy spring with rapid and complete blooming in the first half of June. Despite average temperatures, the summer was remarkable for generous sunshine and a dry spell that lasted until the beginning of harvest on September 8-10. Regular-sized crop. Produced from historic Grand Crus with sustainable viticulture practices. Can be cellared until 2040 in magnum format.
