Production Details Fermented in stainless steel tanks using cultured house yeast strains. Full malolactic fermentation completed. First Plénitude release after 8 years of lees aging. Produced from 100% Grand Cru and Premier Cru vineyards (including Hautvillers). The 2006 vintage was very hot and dry overall. Vines grew in fits and starts with a heatwave during July succeeded by a cool and humid August. September's summery weather assisted the grapes in developing much more maturity than usual. Harvest was the longest on record at four weeks beginning September 11th. Chef de Cave Richard Geoffroy described 2006 as a low acid vintage which made it quite a challenge to provide the usual Dom Pérignon precision and focus. The vintage features early ripeness with aromatic maturity. Predominantly chalky soils characteristic of the region offer optimal drainage and bring singular minerality to the wine.
