Production Details The entire 1989 crop was produced as Late Harvest (Vendange Tardive). Some grapes botrytized, others from passerillage (late-picked/raisinéd grapes). At harvest, alcohol potential was 15.1 degrees, fermented to 14 degrees and kept 18 g/l residual sugar. Sugar well harmonized with acidity and alcohol. Over time, sugar has largely disappeared in the wine through continued maturation. Bottled in spring following harvest. Bottle-aged minimum 6 years before release.
