Production Details Hand harvested; grapes transported in small tubs and gravity-fed to the presses without pumping; must settled for several hours, then fermented at 18–24°C in temperature-controlled vats; racked once, clarified naturally over winter, lightly filtered the following spring before bottling, and cellared in bottle until release.
