Production Details Grapes harvested exclusively by hand from clay and limestone vineyards in a dozen favoured localities in and around Riquewihr with high percentage of estate grapes. Grapes taken in small tubs to gravity-filled presses without pumping or mechanical intervention. After pressing, must decanted for a few hours, then fermented in temperature-controlled vats (18-24°C). Wine racked once before natural clarification during winter. Lightly filtered before bottling in spring. Bottle aged in cellars before release.
