Production Details Manual harvesting, selecting grapes in vineyard. Second selection before destemming 100% grapes. Rigorous third berry-by-berry selection at winery sorting table. Partial fermentation in stainless steel tanks, partial in French oak vats. After two weeks maceration, pressed and only bleed (free-run juice) retained. Malolactic fermentation completed, transferred to barrels for aging.
