Production Details Late harvest Spätlese. Spontaneous fermentation in traditional Fuder barrels (1000L capacity). Fermentation cooled and separated from yeast when alcohol reaches approximately 7.5%. Vines over 30 years old. Organic farming (certified 1984) and biodynamic practices (certified 2015). No commercial yeasts, enzymes, or fining agents used.
