Production Details All hand harvested and sent across sorting table. Cabernet fruit individually berry sorted before destemming and crushing to build structure. Merlot, Malbec, Petit Verdot whole berry ferments for fragrance and palate weight. Majority fermented in half-tonne fermenters, hand plunged twice daily. One third of Cabernet fermented in brand new 3500L upright oak cask with 8 weeks on skins for complexity and savoury component. All matured in French oak, 40% new, 15 months barrel maturation before blending.
