Production Details Each parcel handpicked, hand sorted and whole bunch pressed separately. Fruit racked and transferred to combination of new and older oak barrels for wild yeast fermentation. Varied levels of malolactic fermentation took place amongst individual barrels. After 10 months in barrel, blended and bottled unfined and filtered. Six weeks in concrete after barrel aging.
