Production Details Handpicked, hand sorted and destemmed. Fermented in one tonne stainless steel fermenters. Cold soak 4-5 days before wild yeast fermentation with average 14 days on skins. Pressed to tank and racked to barrel with all parcels kept separate, undergoing natural malolactic fermentation. Aged in combination of old and new puncheons and barriques (18% new oak).
