Production Details 5-day pre-ferment maceration. 100% wild yeast fermentation (total 25 days on skins). Pressed and juice placed into 33% new French oak barriques and hogshead. 100% malolactic fermentation in barrel. After 12 months in oak and tank, lightly fined with egg white and bottled unfiltered.
