Production Details The 2021 harvest stood out for consistent cooler weather throughout the growing and ripening period, leading to slower ripening and increased flavour development. The core component of old-vine Franschhoek Semillon showed incredible resilience through a challenging growing season - late rain with January heatwaves. Apart from slightly lower acid at picking (toward the end of February), the fruit was clean and concentrated - flying the old vine flag high. Fermented and matured in 400- and 500-litre old French oak barrels and made oxidatively - whole bunch pressed - with minimal intervention (natural fermentation). Spent almost a year on its fine lees before being blended and bottled.
