Production Details Region: Walker Bay; Ward: Houw Hoek Mountain. Vines grow on the lower slopes of the Houw Hoek Mountains in the Overberg on the Van Der Stel pass, trained with vertical shoot positioning on a traditional 3-wire trellis system. Grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were partially destemmed with part retained as whole bunches and fermented spontaneously in open-top fermenters, staying on the skins for 3 weeks before pressing into older French oak barrels. The wine spent 10 months in barrel before blending and bottling. Official technical analysis also lists free SO2 at 27 mg/l.
