Production Details 3-4 days cold maceration before fermentation with approximately 3 punch-downs per day. Fermentation at 24-26°C. Malolactic fermentation completed in tank. All 5 varieties blended together and aged as a blend for 24 months in French oak (80% large wooden vats/Foudres 6000L, 10% new barriques, 10% second/third-fill barriques). Followed by 12-18 months bottle maturation prior to release. Bottled October-December 2023.
