Production Details Handpicked in three batches, harvested 14 days later than 2020. Paarl batch: two weeks fermentation in closed conical tanks with aerated pump-over. Firgrove batches: two weeks fermentation with pneumatic punch-down four times daily. Natural malolactic fermentation in stainless steel. Racked three times before barrel transfer. 13 months total aging: 10% American oak new, 10% French oak new, 80% French oak second and third fill. Soft tannins from Paarl batch combined with robust tannins from Firgrove batches.
