Production Details Field blend - all varieties picked together same morning. Cooled overnight, whole bunch pressed next day. Juice transferred to old foudre, left undisturbed for natural fermentation. Wine left on lees for entire 12 months in old acacia and oak foudres. Two weeks prior to bottling, transferred to blending tank and 60mg/L SO2 added. Bottled unfiltered from lees.
