Production Details Grapes cooled before processing. Whole bunch pressing (3 hours with settling in tank). Natural fermentation in old foudres, 1-6 months duration, sometimes continuing into spring. Malolactic fermentation often completes during aging. Wine left on lees for entire 12 months. 50mg/L SO2 added 2 weeks prior to bottling. Bottled from lees.
