Production Details Whole bunch press for 2-3 hours with juice settling. Natural fermentation in concrete eggs (725L) and clay amphoras (400-1200L) at constant ~18°C ambient. Each vineyard ferments in same vessel yearly, fermentation takes up to 18 months naturally. 12 months aging in vessels, then 12 months in large old foudres. Bottled unfined and unfiltered. 17 vineyards, 14 in Paardeberg.
