Production Details Hand sorted berries in small cases. Spontaneous fermentation in 3300L open concrete fermenters at 24°C for ~3 weeks, then 3-week post-fermentation maceration. No additions during fermentation. Basket press. 12 months in French oak barrels (5% new), then additional year in large foudres on fine lees. Bottled unfined and unfiltered. Extremely bright red fruit with seamless structure.
