Production Details Hand-harvested into lug boxes, cooled in cold room, transferred to tulip-shaped concrete tanks for fermentation. 60% whole-bunch clusters, spontaneous fermentation with minimal sulfur additions and no acidification. Soft délestage performed 2-3 times per day. Basket pressed and gravity-fed into foudres and demi-muids for aging.
