Production Details Hand-picked whole bunches crushed into concrete fermentation tanks with submerged cap. Minimal pump-overs. Ferments ran cool and dry within 10 days. Matured 12 months in 90% foudre and 10% concrete egg. Bottled mid-July 2020. Annual rainfall 415mm with 32mm from October to February. Even bud break mid-September.
