Production Details Hand picked and chilled overnight. Whole bunch pressed to settling tank. Picked over 12 days with fresh juice added daily, extending fermentation ~20 days. ~25% fermented in older casks and big foudres. Yield ~4 tons/hectare. Occasional lees stirring during 7 months gross lees aging. Long ripening period in mild conditions.
