Production Details Hand-harvested, destemmed but not crushed. Whole berries fermented in vessels for approximately 18 days. Pressed and moved to selected French oak barrels for malolactic fermentation and aging. Blend created at first racking (6 months), with two more rackings during aging. Aged in old 225L and 500L French oak barrels. Shiraz-led blend with forward fruit aromatics of violet, cherries and licorice with classical cigar box spice notes. Sourced from Stellenbosch and Elgin. Vintage characterized by good long winter with late rains and cold delaying pruning, windless conditions during flowering resulting in high yield vintage, extremely hot February temperatures pushing ripening with quick harvest. Highest recorded tonnages for Waterford Estate. Red wines impressed.
