Production Details Hand-harvested, destemmed but not crushed. Whole berries fermented for approximately 14 days. After fermentation, pressed and transferred to old French oak barrels for malolactic fermentation and ageing. Blend made during first racking at 6 months, with two additional rackings during ageing before bottling. Aged in older French oak barrels (300L, 500L, and 2400L Foudre) for 22 months total.
