Production Details Single vineyard on south-west slopes of Helderberg Mountain, WO Stellenbosch. Ample aged vines planted at higher altitude on mountain granite and iron-rich soils. Long and slow ripening on clay duplex layered soils in cooler macro climate. Overlooks South Atlantic Ocean nearby, influenced heavily by chilling oceanic winds daily. Grapes hand-harvested into lugboxes early in the morning. Healthy grapes in dry 2018 vintage. Blend of two separate fermentations. First fermentation 100% whole stems intact, crushed and foot-trotted. Second fermentation 30% whole clusters, rest destemmed. Natural spontaneous fermentation lasted 2+ weeks with 1 week post-fermentation. Basket-pressed directly to barrel. Aged on lees for 10 months in old (5th fill) French oak 400-liter barrels. Blended and gravity settled. Hand-bottled without fining or filtration. No additives or alterations to juice or wine except trace amounts of sulfites. 2018 vintage featured new vineyard site (previous 2017 vineyard had been pulled out). Old-world, medium-bodied style focusing on purity of Syrah expression.
