Production Details Syrah (100%). Single vineyard site in the lower parts of the Helderberg, WO Stellenbosch. Mature dry-farmed bushvines on sandy granite-derived topsoil with white clay subsoil, planted in "Treinspoor" double bushvine rows close to False Bay. Grapes were hand harvested into lugboxes early in the morning. The wine was made from two separate fermentations: one with 70% stems intact and foot trodden, the other with 30% whole clusters. Natural spontaneous fermentation lasted over 2 weeks. Basket pressed directly to barrel and aged on its lees for 10 months in old (4th fill) french oak barrels, then hand bottled by gravity without fining or filtration. No additives or alterations except trace amounts of sulphites. This vineyard was pulled out after the 2017 vintage by the new owners of the farm; the wine is called "Swanesang" to honor its last performance.
