Production Details Hand-picked fruit in small boxes. 70% destemmed, 30% whole-cluster fruit layered on top in 1,500-litre open-top vessel (lasagne method). 10-12 day natural fermentation with wild vineyard yeast at 22-26°C (72-79°F). Few pump-overs. Gentle extraction using infusion method. Pressed to neutral French oak barrels (400L and 225L fifth-fill). Aged on fine lees for 11 months. Underwent malolactic fermentation. Bottled unfiltered and unfined with minimal sulfur. Harvest date: 1 February 2023.
