Production Details Vineyard has younger and older vines ripening 2 weeks apart, picked and vinified separately. Whole bunch pressing, 12 hours settling during pressing, turbid juice transferred next morning to old foudres. Wine left on lees for entire 12 months. Two weeks prior to bottling, transferred to blending tank and 50mg/L SO2 added. Bottled unfiltered from lees.
