Production Details Vineyard has younger and older vines ripening 2 weeks apart. Young vines pressed into 500L casks, old vines into foudre, later blended. 12 hours settling during pressing, turbid juice transferred next morning. Wine left on lees for entire 12 months in foudre and amphora. Two weeks prior to bottling, transferred to blending tank and 50mg/L SO2 added. Bottled unfiltered from lees.
