Production Details Blend of 85% Shiraz and 15% Cabernet Sauvignon. Grapes sourced from best organic vineyards across Western Cape, a quarter from estate. Sorted, destemmed. Wild, spontaneous fermentation in combination of concrete tanks and open-top stainless-steel fermenters using submerged cap fermentation. 25% of wine spent 8 months in older oak barrels. Assemblage made up and bottled.
