Production Details Hand-harvested and cooled overnight. Some batches whole bunch pressed, others destemmed. Juice lightly settled overnight without enzymes. Spontaneous fermentation in seasoned oak barrels. Aged on lees for 8 months. First dose of SO2 once racked out of barrel.
