Production Details Some Sauvignon Blanc grapes harvested earlier than usual. Grapes de-stemmed before pressing. Remainder of grapes picked later and whole bunch pressed. Must allowed to cold settle overnight in stainless steel tanks without pectolytic enzymes. Juice racked into well-seasoned French barrels for natural fermentation. Aged for eight months on gross lees in barrel. Bit of sulphur added prior to bottling only.
