Production Details Single vineyard planted 1997, 3.97 hectares. Three quality French clones. Hand harvested into small crates, cold room overnight, crushed and destemmed early morning. Skin contact in press 4-6 hours, only free run fraction used. Fermented at 15°C for 12 days. Lees aging before blending and bottling. Grapes cooled by evening mist and sea breeze. Block harvested in segments selecting only best grapes. Drinking window: Now to 5 years.
