Production Details Early morning hand-harvested whole bunch pressed grapes. Juice settled in stainless steel tanks with minimal sulfur addition (6-9 months). Natural primary and secondary fermentation, no commercial yeast, enzymes or fining agents. Matured 12 months: 20% new French oak, 20% seasoned French oak, 60% Amphora Clay and Cement eggs. Blended and bottled unfiltered.
