Production Details De-stalked and hand-sorted. Natural fermentation in open wooden fermenters for approximately 7 days. Malolactic fermentation occurred in barrels. Matured 21 months in 225 litre French oak barrels (new, second, and third fill). Racked and sulphured after malolactic fermentation; racked a further two times during maturation. Vineyard age 25 years. Manual harvest and hand pruning/canopy management.
