Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, soft destemming to preserve intact berries and prevent harsh phenolics, destemmed to stainless steel tank for 1-2 week maceration period, spontaneous fermentation with yeast inoculation, pump-overs 3 times daily during fermentation, post fermentation drained off skins and lightly pressed with nitrogen press, transferred to steel tank, settling, racked to 500L oak barrels (50% new, 50% 2nd fill) combination of French, Hungarian and Russian oak for malolactic fermentation, racked once after MLF and once more during aging.
