Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, softly destemmed, cold soaked overnight in nitrogen press, juice pressed next morning, settling for 2 days, clear juice racked to stainless steel for fermentation, portion of each block fermented in stainless steel and other in 500L French Oak Barrels, wines racked and returned once during aging, each block kept separate during vinification and aging with final blending before bottling, 70% aged in French Oak (50% new oak).
