Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, softly destemmed, cold soaked overnight in nitrogen press, juice pressed next morning, settling for 2 days, clear juice racked to stainless steel for fermentation, 70% of wine fermented and aged in combination of French and Hungarian 500L oak barrels (50% new oak, 50% second fill) for 9 months, 30% fermented and aged in stainless steel tanks, wines kept on lees until blending before bottling.
