Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, softly destemmed, cold soaked overnight in nitrogen press, pressing the following morning, settling for 2 days, clear juice racked to stainless steel for primary fermentation, aged in 500L French Oak barrels (50% new oak, 50% second fill), racked once during aging, 30% of wine completed malolactic fermentation, each block kept separate during vinification and aging with final blending before bottling.
