Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, destemmed, spontaneous fermentation with yeast inoculation, punch downs and pump-overs 3x daily during fermentation, aged in combination of 500L French Oak barrels and flexcubes, racked after MLF and during aging period, each block kept separate during vinification and aging with final blending before bottling.
