Production Details Hand harvested in early morning, cooled overnight at 3°C, bunches sorted and pressed whole, light pressing for optimum juice extraction without harsh phenolics, juice pressed to stainless steel, settling for 2 days, clear juice racked for inoculation, cold fermentation followed by malolactic fermentation, second fermentation in bottle with fine mousse development, aged on lees for 3 years before disgorging.
