Production Details Grapes lightly crushed and gently pressed; settled overnight. Racked into stainless steel tanks with spontaneous fermentation. Fermented between 14°C and 17°C. Left on lees in topped-up tanks with occasional stirring for texture and mouthfeel. No malolactic fermentation to preserve freshness.
