Production Details Stellenbosch blend from Helderberg Merlot on decomposed granite soil, valley-floor Cabernet Sauvignon, and Helderberg Cabernet Sauvignon and Cabernet Franc facing toward Stellenbosch. Grapes were cooled overnight to 4C, destemmed into open-top fermenters, fermented spontaneously, remained on skins as long as possible, then were pressed to older small French oak barrels for 18 months before blending and bottling.
