Production Details Western Cape white blend from vineyards in Firgrove, Swartland, Stellenbosch, and Voor-Paardeberg. Grapes were picked at optimal ripeness, cooled overnight to 4C, whole-bunch pressed with no additives, then fermented spontaneously in older French oak, clay pots, and egg-shaped cement tanks. The wine received sulfur in deep winter, spent 10 months on the lees, then was blended and bottled.
