Production Details Hand-sorted berries, no crushing, transported in satellite tanks, filled by gravity, cold maceration 12-14°C for 6 days, fermentation in 3.5-ton wooden vats, natural fermentation start with Burgundian yeast inoculation after one-third fermentation completed, hand punched down max twice daily, malolactic fermentation in barrel, aged on fine lees 11 months, blind tasted selection for Seven Flags blend. Seven Flags is a grape selection from one of the oldest Pinot noir vineyard, planted to clone 113 in 1990. Production: 1,100 cases (x6).
