Production Details Blend of Weisser Riesling, Sémillon and Sauvignon blanc from Elgin, Ward Valley Road. Grapes were cooled overnight to 4C, pressed as whole bunches, then underwent spontaneous fermentation in concrete egg-shaped tanks, amphora and older French oak barrels. The wine received one sulfur addition in deep winter, spent 10 months on the lees, then was blended and bottled. Grapes were typically picked near the autumn equinox at 21-23 degrees Balling.
