Production Details Long ripening period ensured sweet berries fully ripened and desiccated. Raisined berries selected and fermented on skins with daily pump overs. After week, fermenting must pressed and allowed to ferment to desired sugar balance in barrel. Racked back into old barrel to mature for 24 months before blending and bottling.
