Production Details Hand-harvested in two passes to select ripest grapes, mid-September (Trebbiano di Soave) and October (Garganega). Destemmed and gently crushed in nitrogen saturation. Fermented separately at low temperature (14-18°C) in glass-lined concrete tanks. Aged on fine lees with manual battonage for 12-15 months.
