Production Details Hand-picked at optimal maturity end September. Soft de-stemming, cooled to 4-6°C, 8-hour skin maceration, gentle pneumatic pressing. Slow fermentation at 15-18°C in stainless steel. 30% aged in French oak barrels for 4 months. Released September following vintage year.
