Production Details Selected blocks green harvested during véraison in August. Hand-harvested in small boxes, hand-sorted. Gently de-stemmed and crushed for fermentation in open-lid 225L French oak barrels. Cap management by hand punching only, minimizing mechanical impact. 20-day maceration. Transferred to closed oak barriques for malolactic fermentation and 12 months aging. Coarse filtration before bottling, followed by cellar bottle maturation.
